A Tradition Passed Through Generations

For twelve generations, the Walsh family has been connected to the craft of making spirits in Southern Ireland. From the foothills of Croagh Patrick, where illicit distillation was a hidden family vocation, to our current home in the historic St. Patrick’s Woollen Mills near Cork city center, our journey is a homage to our forebears and their endeavors.

Our goal is simple: to produce whiskeys of character, taste, and personality. That dedication begins with the foundation of our craft. Every drop of St. Patrick’s is Triple Distilled for unparalleled smoothness and aged in carefully hand-selected oak casks to patiently curate our signature flavors.

CLASSIC Irish Whiskey

Our signature blend of grain, malt, and pot still Irish whiskeys is aged in hand-selected, double-charred casks sourced from some of Kentucky’s most celebrated bourbon distilleries. The result is a whiskey that’s smooth, full-bodied, and remarkably approachable — rich in character with a mellow finish that invites another sip.

Tasting notes:
The nose reveals toasted oak, sawdust, and honeyed grain, layered with sweet cereal, buttery undertones, and a touch of green apple.
On the palate, vibrant orange zest and juicy sultanas blend with creamy custard, toffee, and light spice. A smooth, silky texture carries into a clean finish, leaving echoes of vanilla, oak, and gentle warmth.

7 Year Old Irish Whiskey

Handcrafted in small batches using time-honored techniques, St. Patrick’s Irish Whiskey is distilled in Ireland from a blend of grain and malted barley and pure, naturally soft water. Aged for more than seven years in first-fill bourbon barrels, this whiskey combines seven-year-old grain with select malts aged up to fifteen years — resulting in a smooth, balanced spirit that embodies true Irish craftsmanship.

Nose: Fresh and clean with aromatic oils and spices.
Palate: Sweet and smooth, with fruit, floral and spice notes.

10 Year Old Sherry Cask Finish Irish Whiskey

Handcrafted in small batches using traditional Irish techniques, this whiskey is distilled from grain and malted barley and patiently aged for ten years. Finished in European oak sherry casks, it offers a beautifully balanced depth of flavor and a smooth, lingering finish.

12 Year Old Port Cask Finish Irish Whiskey

Handcrafted in small batches using time-honored Irish techniques, this whiskey is distilled from grain and malted barley, then patiently aged in first-fill bourbon barrels. It’s finished in European oak tawny port casks from Portugal’s famed Douro Valley, developing a rich, layered depth of flavor.

Aged for twelve years and completed in European oak sherry casks, it delivers exceptional smoothness with notes of warmth, complexity, and enduring character.

Single Malt Bourbon Cask Aged Irish Whiskey
